Abstract

Extensive work has been carried out during the past hundred years to assess the biological values of foods consumed by human populations. Most of these studies were designed to include experimentally administered diets.

Abstract

Interest in the biological significance of selenium was initially confined to its toxic effect on animals. Toxicity of this element in animals was first demonstrated in 1842. Attention became focused upon the physiological rather than the toxicological role of selenium in 1957.
